I love BBQ, but I don’t love paying $32 for a plate and side choices I don’t really want. Can I get an AMEN? Plus, I am quite particular about BBQ sauce. Anyone else out there remember those horrible BBQ sauce packets from grade school lunches?🤮
With the right dry rub, you really don’t need sauce in my opinion. Why are we covering up the flavor of our foods with sauces? No judgment if you like sauce, I’m just curious if it is necessary with the right seasoning.
This is the simplest chicken recipe out there. I like to use my Green Mountain Grill for a nice smokey flavor, but you can also roast the chicken in the oven.
Seriously so easy, here we go:
Step 1. Clean + pat dry a whole chicken (I use ButcherBox for organic free range poultry)
Step 2. Generously coat the chicken in Gooch’s All Purpose (AP) rub.
Step 3. Two hours at 325 degrees (or until internal temp reaches 165).
** Side tip: I put a can (filled ½ way) with sparkling water in the chicken’s behind if using the grill!
It is easiest to pull the meat apart while it is still warm. I eat it fresh off the grill and store the rest (if there are any leftovers) in the fridge for the next day. This can make an awesome chicken salad with some Primal Kitchen avocado mayo and homemade spicy relish. YUM. I’m getting hungry just thinking about this recipe.
